Historically

Salim Usta, the founder of İkbal, began his culinary career in the early 1900s. Following that, he worked as an assistant cook in Istanbul's Yıldız Palace. Salim Usta, who left the palace as a master, started his own business in 1922, founding a modest restaurant in Afyon with his older brother and brother. When word of Atatürk's arrival to Afyon arrived in 1934, the question of how to host came to the forefront.

Ahmet Evrendilek, the Governor of the time, speaks with Bekir Evrenkaya, the Chief Clerk of the Province. Evrenkaya believes he may ask Kabakli Neighborhood Headman Mustafa Pancar's son, Chef Salim Usta, to make the dishes. Moreover, Salim Usta begins the preparations for Atatürk's supper with great care and comes up with an extravagant meal. Atatürk, who enjoys the cuisine and the setting, summons Salim Usta, learns his narrative and inquires about the name of his restaurant. "If you continue in this manner, your luck will be extremely apparent. Let the restaurant's name be IKBAL, which means "good luck." The IKBAL sign was already in place when Pasha departed Afyon.
